Traditionally, it is made using teak leaves (saguvani) and the Teak leaves impart their own color and aroma to this delicacy.

2. Steamed rice roll (Local name : Pajey Madipula)

Pajey Mandela is simple rice bread that involves rice, grated coconut and salt. The smoothly ground batter is thinly spread over the banana leaves and rolled up like a carpet. These leaf rolls are then steamed, cooled, unrolled and the breads are served with a curry of your choice.

Patrode is a seasonal delicacy made from coloasia leaves stuffed with rice flour and steamed. Later, it’s added to a custom made coconut gravy to give off a delicate range of flavors.
