Honey Lime Chicken Recipe

INGREDIENTS for Honey Lime Chicken Recipe

For the Chicken :

  • 3 breasts
  • 2 tablespoons honey
  • 1 Lime
  • 1 teaspoon oregano
  • 1 or teaspoons chilli flakes
  • Half teaspoon turmeric (gets rid of the smell)
  • 3 tablespoons curd
  • 2 teaspoons Pepper
  • 1 and half teaspoon oil
  • Salt to taste

For the Herb Rice

  • 1 cup basmati rice
  • 1 handful coriander
  • Butter
  • Salt to taste

For the Potato Cakes :

  • 3 potatoes
  • Half an onion
  • 1 egg
  • 2 pinches chilli powder
  • Salt to taste

For the Mushroom Sauce :

  • 7-8 mushrooms
  • Butter
  • Cream
  • Salt to taste
  • Pepper

For the Fried Veggies :

  • Your choice of veggies
  • Salt to taste
  • 1 or 2 teaspoons soya sauce
  • Butter
  • Pepper

METHOD OF PREPARATION for Honey Lime Chicken Recipe

  1. Prep the chicken. Cut slits into it so that the spices can easily absorb into it. Mix all the ingredients under ‘Chicken’ into a bowl and mix well. Add the chicken and mix. Keep it in the fridge overnight or a few hours before cooking.
  2. Boil the rice until it had a little bit of bite to it. Drain water and run it under cool water to prevent it from clumping together.
    Chop the coriander finely. Add butter in a vessel and fry coriander for a minute. Add rice and salt and mix. Set aside.
  3. Prep your veggies by chopping it into bite size pieces. Mix with salt , pepper and any other spice you desire. Heat pan and add butter . Fry the veggies and add the soya sauce. 2 minutes under high heat is enough.
  4. Slice mushrooms. Add butter to pan and fry mushrooms till browned. Add salt and pepper . Now add cream. There’s no exact amount for this. So, just eyeball it ^_^
  5. Peel potatoes. Chop into 2 inch pieces . Salt the water and boil potatoes till soft. Mash the potatoes but leave coarse bits. Add salt and pepper . Finely chop the onion and mix it. Let the mixture cook and now add egg. Make small patties not too thick. Fry on pan till you get a golden brown layer.
  6. Plate it well and serve. Voila!!! You have a dish that tastes like you ordered it .
