A two ingredient summer cooler which is astonishingly refreshing. Summer has hit Mangalore in all its finest glory. Long drives with the windows open are an absolute mandate. Last week on one such long drive to Moodabidri ( outskirts of Mangalore) my friends and I made a quick stop to a small eatery. We had heard so much about their ‘Palak Masala Dosa’ that we couldn’t resist stopping for a bite. Although the dosa was absolutely yum what caught my attention was a drink made from sesame  seeds.
 
Sesame seeds are also known as til (Konkani), yellu (Kannada) or yenme (Tulu). White sesame seeds due to their nutty sweet flavor are always preferred for this refreshing drink. In addition to being gluten-free, sesame seeds are rich in vitamin E and are said to have anti-carcinogenic properties. Needless to say they also help you look young as they boost the growth of healthy cells.

White sesame seeds are the main ingredient for this cooler. I used jaggery as a sweetener since it is rich in Iron and I love the hint of saltiness that it adds to the drink. I suggest you use any sweetener that is readily available to you. Just make sure to adjust the sweetness according to your preference.

Serves : 4
Prep Time:  10-15 minutes
Cooking Time: Nil
Ingredients:
100 gms of white sesame seeds (til/yellu)
500 ml of water
Jaggery or any sweetener as per availability
Method
Step 1: Wash the white sesame seeds in water for a few seconds
Step 2: Soak the sesame seeds in 100 ml of water for 10-15 minutes
Step 3: Finely grind the sesame seeds
Step 4: Add the remaining water to this mixture
Step 5: Add a sweetener according to your preference and mix well
Step 6: Strain the mix and serve chilled
Hint
You can serve the drink without straining the sesame seeds too. This adds a little bit of a bite and enhances the texture of the drink
