Mangalore’s famous Chicken Ghee Roast Recipe

- Lime juice,
- Turmeric powder,
- Dry Chilly,
- Coriander seeds,
- Cumin seeds,
- Fenugreek seeds (Methi),
HOW TO MAKE Mangalore Chicken Ghee Roast Recipe
Step 1 – Marination
Add 1 tablespoon of lime juice, 1 teaspoon of turmeric powder, curd, and some salt to the chicken and keep it aside for 2 hours.
Step 2 – Masala
Fry dry chilies, coriander seeds, cumin seeds, fenugreek seeds, and cloves in a dry pan.
Add all these fried ingredients along with tamarind and garlic in a mixer grinder and grind it to a fine paste.
Step 3 – Final Cook Off
Add ghee to a pan and boil the marinated chicken. After it’s properly cooked, keep it aside on a plate. In the same pan add the masala and boil it for a while (if necessary add some ghee to it). Add back the cooked chicken pieces, add jaggery and cook it for 5 minutes. Apply salt for taste. …and there you have it! Delicious lip-smacking ghee roast. For Vegetarians, I recommend you replace the chicken with paneer/mushrooms.
